Help! Cat bites!

We have a beautiful female siamese - we've had her since she was 5 weeks old. (she is now 2 years 6 months old). We are very close to her. She is loving but at certain times, especially lately, she bites - real fast and hard and then she runs away because she knows she has done wrong. The last bite caused my husband's hand to swell twice its size and he had to take an antibiotic and get a tetanus shot. I was holding her and she bit me in the face. I don't know what is causing this kind of aggression - we are very loving to her - she gets the best food, etc.

Can you shed any light?
